Apple Pie Enchilladas
 
Oh boy, are you ready for this one?  I got some apple pie filling and made these.  They are soooo easy to make and taste sooooo good.  Here is the recipe. 
 
1 dozen flour tortillas
1 large can apple pie filling (or cherry)
1/2 C White sugar
1/2 C Brown sugar
1/2 C Unsalted butter
1/3 C Water 

Spoon about 1/2 to 1 cup of apple pie filling onto a warm flour tortilla and sprinkle with cinnamon, fold in the sides and roll it up like a burrito (depending on tortilla size.  I used 12" diameter tortillas.  They rolled up and fit perfectly width wise into a 9X13 pan).  Place rolled tortillas into a casserole dish that has been sprayed with non-stick spray.
 
Combine sugars, water and melted butter and whisk until combined and sugars are dissolved.  Pour mixture over the top of the rolled apple pie enchiladas.  Sprinkle cinnamon over the top of the enchiladas.  Put into a 350 degree preheated oven for 1 hour or until the tops of the enchiladas are brown.  Serve either warm or chilled.

Brothers and Sisters of the Maricopa Arizona Stake.  We are happy to announce that the Stake has purchased an All American 21.5 quart Pressure Cooker/Caner.  This cooker/caner will hold 19 pint jars or 7 quart jars.  This now is another tool that the Stake has to help in your efforts in obtaining your food storage goals.  With the Stake garden getting ready to harvest, now is a good time to can some of the efforts of your labor. 

We have three tools now in the Stake that can be used to increase your food storage program.

1.  Two #10 can sealers, one in Maricopa and the other in Ajo.
2.  One Mylar bag sealer and quart size mylar bags in Maricopa.
3.  All American 21.5 quart pressure cooker/caner in Maricopa.

The items in Maricopa can be checked out by contacting the Stake Welfare Specialists, Bob and LouAnn Singer on a first come first serve basis.  There will be a few minutes of training before picking them up if you have not used them in the past.

We will also teach a class this fall on using the pressure cooker/caner. 

Please take advantage of these resources to help you become more self sufficient by increasing your family food storage program and following the counsel of the Prophets.  As you do, the Lord will bless you and your families.

We have a new recipe for Gluten Free Cornbread
with a Suprise!



LouAnn found this recipe for Gluten Free cornbread the other day.  We jazzed it up a little with a couple of surprises. 

Dry
1 1/2 cup Honeyville Corn Meal
1 1/2 cup Honeyville Blanched Almond Flour 
2 tsp Baking Powder
1 tsp Sea Salt

Wet
2 Large Eggs or 4 Tbsp Ova Egg Crystals
1 cup Milk (if lactose free, use lactose free milk)
3 Tbsp Honey
1/3 Cup unsweetened Applesauce (surprise)
1 Tbsp Chia Gel (surprise, see below on how to make it)
3 Tbsp butter (melted)

Method
Preheat oven to 425 degrees.
Whisk together dry ingredients in a large bowl.
In another bowl, combine wet ingredients and mix thoroughly.
Stir wet ingredients into dry but don't over-stir, just enough to combine.
Spray 11 X 7 inch pan with non-stick coating and put batter in pan.
Bake for 15-20 minutes until bread is golden brown and stick test comes out clean.

This is the second time we have enjoyed this gluten free corn bread.  Hope you will try it, you will LOVE it.

How to Make Chia Gel
Not just for Chia Pets but it is very good for you.  Here is how LouAnn makes it.  

1 part Chia Seeds to 9 parts water.  Let the Chia/water set for about 30 minutes in a pot.  It will start to gel, kind of like tapioca.  To me they look like frog eggs.  haha.  She uses it in almost everything she bakes and keeps it on hand made up in a small Tupperware type container in the refrigerator.  It will last for several days in the frig.
