Apple Pie Enchilladas
 
Oh boy, are you ready for this one?  I got some apple pie filling and made these.  They are soooo easy to make and taste sooooo good.  Here is the recipe. 
 
1 dozen flour tortillas
1 large can apple pie filling (or cherry)
1/2 C White sugar
1/2 C Brown sugar
1/2 C Unsalted butter
1/3 C Water 

Spoon about 1/2 to 1 cup of apple pie filling onto a warm flour tortilla and sprinkle with cinnamon, fold in the sides and roll it up like a burrito (depending on tortilla size.  I used 12" diameter tortillas.  They rolled up and fit perfectly width wise into a 9X13 pan).  Place rolled tortillas into a casserole dish that has been sprayed with non-stick spray.
 
Combine sugars, water and melted butter and whisk until combined and sugars are dissolved.  Pour mixture over the top of the rolled apple pie enchiladas.  Sprinkle cinnamon over the top of the enchiladas.  Put into a 350 degree preheated oven for 1 hour or until the tops of the enchiladas are brown.  Serve either warm or chilled.
